Electrolyzed Oxidizing Water (EOW), or electrolytically generated hypochlorous acid, is a safe and effective antimicrobial on fruits and vegetables. Electrolyzed water has demonstrated in numerous studies to be highly effective for inactivating E. coli O157:H7, Salmonella enteritidis, Listeria monocytogenes, and spore-forming bacteria. EOW is a no-rinse sanitizer. No post-rinse with potable water is required. EOW leaves no harmful residues, does not alter taste, does not leave an odor, and does not cause discoloration of produce. EOW is ideal for replacing the water used in produce washers. There are no limitations to the capacity that can be produced. For large produce washers, the ECOLOXTECH 1200 can produce 30 ton of electrolyzed water (hypochlorous acid) per day. The systems can also be stacked to meet any produce washer need. Electrolytically generated hypochlorous acid is a powerful oxidant that is stable in solution. When saturating produce contaminated with microbial pathogens, hypochlorous acid quickly inactivates the pathogens by damaging their cell walls and disrupting their internal proteins, lipids, and DNA.
